Crunchy Lime Pepper Salsa
Crunchy and oh so fresh, this salsa is perfect to pair with grilled chicken or is a fantastic taco topper.

Medium sized bowl

Ingredients
2-3
Anaheim peppers

Large Red Onion -
or 3 Small Red Onions

Cilantro

Large Limes
Instructions
Rinse off all ingredients.
Peel outer layer of onion skin and dice. Add to the bowl.
Slice off top of pepper and cut in half lengthwise. Remove pith and seeds, then dice and add to bowl.
Finely chop the bunch of cilantro and add to the bowl.
Optional step: zest one lime and add to bowl.
Cut two large limes in half and squeeze the juice into the bowl.
Stir to combine. Use immediately or allow flavors to blend in the fridge for up to 8 hours before use.
