Crunchy Pepper Lime Salsa
This Crunchy Pepper Lime Salsa adds a pop of freshness to anything you pair it with. Fresh lime juice and chopped cilantro will wow your taste-buds and elevate Taco Tuesday to another level!
I got this recipe from a friend at work. He grilled some chicken for lunch and made this quick, crunchy salsa to go with it. He kindly let me try a bite. I made some at home that very weekend and was blown away by how easily it came together and the unparalleled freshness it brought.
First, gather up your ingredients:
You will need:
- One large red onion
- Two or three Anaheim peppers (or if you prefer more spice, jalepeno peppers)
- A bundle of fresh cilantro
- Two large limes
- Salt and pepper to taste
Next, prepare your ingredients:
Dice the onion and cilantro. Cut the peppers in half, remove the pith and seeds and dice. Add the diced ingredients to a bowl. Optional step: before cutting the limes, zest one into the bowl. Cut the limes in half and squeeze the juice over the ingredients. Stir ingredients together and add a pinch of salt and pepper if desired.

This recipe is easily doubled or tripled for a crowd and can be prepared up to 6 hours ahead of time. Any longer than 8 hours and the color starts to darken but the taste is just fine.

Crunchy Lime Pepper Salsa
Equipment
- Chef's knife
- Medium sized bowl
- Zester - optional
Ingredients
- 2-3 Anaheim peppers
- 1 Large Red Onion – or 3 Small Red Onions
- 1 bunch Cilantro
- 2 Large Limes
Instructions
- Rinse off all ingredients.
- Peel outer layer of onion skin and dice. Add to the bowl.
- Slice off top of pepper and cut in half lengthwise. Remove pith and seeds, then dice and add to bowl.
- Finely chop the bunch of cilantro and add to the bowl.
- Optional step: zest one lime and add to bowl.
- Cut two large limes in half and squeeze the juice into the bowl.
- Stir to combine. Use immediately or allow flavors to blend in the fridge for up to 8 hours before use.
